I’ve been drafted.  Been married to a sweetie pie for 60 years and she’s cooked for most of those years.  Then she got tired of it, or maybe just tired.  We’re getting up there.  So she kinda rebelled and now I’m in charge of cooking dinner.  Wow.  What a nightmare.  I had no idea what to do.  I can’t cook worth a damn.  She buys all the food and we have enough on hand to last until….  Well, I was tempted to say something facetious (read sarcastic) but what’s the point?  This post is about cooking.  What to do?

Google.  I’ve tried Bing and DickGoGo but there’s no difference and the people who think otherwise are just a little full of shit.  Anyway,  I just look in the freezer and see what on top, pull it out, Google what occurs to me, and find a recipe.  Well, I’m not really a recipe kinda guy, I usually just wing everything, and cooking’s no different.  I write down the ingredients for what I find and the cooking temperatures and time on a 4×5 card and have at it.  So far dinner’s been an adventure for both of us.  She’s relieved, I’m living a nightmare starting when I wake up and ends when it starts again when I wake up to the nightmare of what to fix for dinner the next morning.  But a happy wife makes for a happy life.

Pat arbitrarily bought an eggplant the other day so we’re having Eggplant Parmesan for dinner.   And the thought just occurred to me that I can make Shrimp Parmesan if I  just jiggle the recipe a little.  I guess a nightmare is not that far from a dream.

Parmesan revisited.  Opened a jar of bottled Alfredo and slathered some on the bottom of the casserole dish.  Layered some precooked small shrimp.  Next came a layer of frozen mixed stir fry vegetables.  Then I put half a can of diced rutabaga over that  Then I layered something else but I don’t remember what it was.  Dumped and sprinkled all kinds of spices over everything and topped it all off with fresh grated parmesan cheese and some packaged mozzarella cheese.  Just occurred to me I cooked some egg noodles al dente and layered it on over the vegetables.   350 F for about 15 or 20 minutes in the over to melt the cheese and done.  Now that was good.
